Fried Eggs on Avocado Toast

Why This Recipe Supports Fertility

Avocado brings monounsaturated fat, folate, potassium and vitamin E; the eggs bring complete protein, choline and selenium; the toast brings fiber and a slow carbohydrate. Protein, fat and complex carbohydrate on one plate in seven minutes from four ordinary things.

Chef Olivia's Tip

Season the avocado in the bowl. You cannot fix it once the egg is on top, and unseasoned avocado is why this dish disappoints people.

Ingredients

  • 4 largeEggs
  • 1Ripe avocado
  • 4 slicesWhole-grain bread
  • 2 tspOlive oil
  • 1Lemon
  • 1 pinchSalt
  • 1 pinchRed pepper flakes

Directions

  1. Toast the bread properly.

    Darker than you normally would. Avocado is wet and cold and it turns pale toast to paste within a minute.

  2. Mash the avocado in a bowl with lemon and salt.

    In a bowl, not on the bread, so you can taste it and season it. Leave it lumpy. Under-salted avocado is the usual thing wrong with this dish.

  3. Fry the eggs in the olive oil.

    Medium heat, three to four minutes, until the whites are set and the yolks still wobble. Spoon a little hot oil over the tops instead of flipping them.

  4. Spread and stack.

    Avocado over the toast right to the crusts, then an egg on each slice.

  5. Season and eat it now.

    Salt, pepper flakes, and break the yolk. It does not wait.
